Christmas Gala Pan Pacific Melbourne
La Chaine Des Rotisseurs Bailliage de Victoria Christmas Gala was held at Pan Pacific Melbourne on 21st November 2022.
Deepak Mishra Director of food and Beverage and Culinary Operation and his entire team left no stones unturned to make this event a talk of the town
The evening started by Bailli Daman Shrivastav acknowledging the traditional custodians of the land and welcomed the members and guests.
The menu was carefully complied starting with glass of Champagne on arrival, Christmas themed table setup including a gift of a bottle of fine wine from Balgownie Estate Yarra Valley which was a pleasant surprise to all.
Philippa’s bread, Mount zero olive oil was a great start followed by well-crafted selections of Amuse Bouche-Angus beef tartare with salt and vinegar chips and avruga caviar, Vichyssoise and spanner crab served in puffed shell, Sydney rock oyster with apple granita and finger lime. All these was paired with NV Three vineyards sparkling Chardonnay Pinot Noir.
The Entrée, Hiramasa King Fish Crudo and poached lobster, Buttermilk, Geraldton wax, mint crisp was an amalgamation of flavors, textures and colours which went very well with 2018 Rockford Local Growers Semillon.
The Cleanser, Wild berry sorbet with Moscato and 24-carat gold was the perfect choice before everyone dived into a sensory experience of main courses of Wagyu sirloin, foie gras, crisp school prawns. Celeriac cream, roasted organic baby vegetables and lobster emulsion paired with 2018 Mt Langhi Ghiran Cliff Edge Shiraz and Black cod, foie gras and sea urchin Spiced butternut squash, turnip Muscatel grapes & caper marmalade with fine drop of 2021 Mt Langhi “Cliff edge” Riesling.
Then came the jaw dropping dessert Valrhona chocolate marquise cherry, roasted chocolate soil and macadamia ice-cream. The Dessert was divine , beautifully mirror glazed, not only delicious but well presented.
