Cheese Masterclass

This past weekend, Chaîne Brisbane was privileged to hold a bespoke cheese masterclass with global expert Russell Smith, Chief Judge RNA, RAS, GDA*. 
 

Held at the Hyatt Regency Brisbane’s Lennons Restaurant, Russell and our Vice Conseiller Gastronomique Jeremy Ryland, led members and guests on a delicious exploration (and tasting) of world cheeses. Over the three and a half hour session, Russell demonstrated the making of Camembert, shared samples, oversaw a taste test, and spoke on how cheese is judged. Congratulations to Janina and Elisa for achieving perfect scores  

The cheeses included four of the 2023 World Champion cheeses, otherwise not available in Australia. Charcuterie platters were provided, along with Champagne on arrival. 
 

A Dîner Amical followed the cheese masterclass, also at the Hyatt Regency Brisbane. Executive Chef Maître Rôtisseur Krisztian Herczig created canapés and a three course menu showcasing cheese, paired with wine supplied by our Professionnel du Vin, Toby Parker from Cru Wines. 
 

A fun and educational day was had by all. Vive La Chaîne!

* Russell: Chief Judge Australian Grand Dairy Awards, Royal Queensland Cheese and Dairy Show, World Cheese Championships, Global Cheese Awards (UK) and American Cheese Society judge educator. He is a commercial cheese maker, Australian dairy industry advocate and recipient of the Peter Doherty Award (Queensland government). Russell Smith had just returned from a six week 5-state tour of the USA delivering his cheese making program for cheese industry professionals.
