Welcome to the Australian National Bailliage (Chapter) of the worldwide Chaîne des Rôtisseurs, proud of a most illustrious history reaching back 7 centuries. In 1248 the French King Saint Louis ordered the establishment of the professional guild of the “Ayeurs” or goose roasters.
With over 25,000 members, the Chaîne is an International Association of Gastronomy established now in over 80 countries bringing together enthusiasts who share the same values of quality, fine dining, the encouragement of the culinary arts and the pleasures of the table.
The distinctive character of our association is to bring together amateurs and professionals, from all over the world, whether they are hoteliers, restaurateurs, executive chefs or sommeliers, in the appreciation of fine cuisine.
The Australian National Bailliage (Chapter) consists of ten established regional Bailliage's each co-ordinating and staging unique and fun filled events. These include themed dinners, lunches, wine tastings, weekend safari getaways and Grand Chapitres attracting a diverse range of members and guests wishing to share friendship, camaraderie and a passion for the culinary arts.
An essential part of the Chaine is the running of the annual The Young Chefs and Young Sommeliers international competitions, set up to encourage and develop the skills and ‘know-how’ of young chefs and sommeliers worldwide. This ‘succession planning’ is an important goal of the Chaîne des Rôtisseurs thereby nurturing new talent.

In Australia there are regional competitions, with the winners entering the national competition. The national winner receives a cash prize then is invited to the international finals taking place in a different country each year. Australia has an amazing track record, winning a medal in every one of the past 7 international competitions, beating talented entrants from the US, Great Britain and many more major countries.
With Chapters on all five continents, when our members travel they are welcome to attend Chapitre events internationally to meet the “locals”, make new friends and experience truly magnificent venues, food, wine and the world wide Chaîne des Rôtisseurs culture.
