How could we ask for more!  The three-day programme was wonderfully organised by the National Committee of Australia headed by

Norm Harrison, Bailli Deluge Australia, Member du Conseil Magistral, Commandeur, La Chaine des Rotisseurs.  Chapitre in Adelaide by the

South Australian Bailliage.

Many members flew in from Bailliages around Australia, as far afield as Darwin, New South Wales and Victoria.

The Chapitre was extremely well attended by Chaine members, prominent dignitaries including member Chevalier d'Honneur Rachel Sanderson MP, and committee members from New Zealand

and guests.

Diamonds and gems adorned the

gorgeous ladies and tuxes and polished shoes for the gentlemen, who attended the intronisation and promotion ceremonies for both La Chaine des Rotisseurs and Ordre Mondial des Gourmets

Degustateurs.

Chaine Camaraderie

The food showcased the best of Australian food,

wine and Chaine camaraderie, with the gala dinner following in the aptly named Diamond room of the Mayfair Hotel.

Pre-dinner we enjoyed a wide variety of stunning canapés ranging from Oysters Rockefeller to Chestnut Blini with Smoked Salmon, Herb Creme Fraiche and Scampi

(Blue) Caviar.

The seated dinner was presented with a flourish by a well-trained brigade.  We dined on Iberico Jamon, Lobster and Venison with exceptional pairing of notable Australian wines.

In the adjoining foyer we were able to choose from the most exquisite extensive dessert buffet, which Head Chef

Bethany Finn created.

 

Many were garnished with flower buds and gold leaf and paired with Mumm Champagne.

An Unforgettable Dining
Experience

The following day we headed off to visit d'Arenberg winery in McLaren Vale, a must see for anyone visiting South Australia.

Chester d'Arenberg designed the Cube which was AUD $15 million in the making.  This unique multi-level structure is an Aladdin's cave of all things wine and quirky undertones showing humour through amazing presentation.

Our programme included a tour, wine tasting, lunch at diary's Verandah and meeting 

d'Arry Osborne himself.

dining experience.

 

Head Chef Peter Reschke draws inspiration from local & seasonal produce to compliment the award winning d'Arenberg wines.

A Riveting Competition

The flawless lunch culminated with our return in silence due to some replete Chaine indulgers.

With just 90 minutes to do a quick change, we re-formed for the Diner Apical at the rooftop bar 2KW for a delicious opportunity to enjoy a feast presented on sharing platters whilst watching Adelaide's night sky.

We concluded the three-day Chapitre with a cocktail party in the prestigious Hennessy Bar, Mayfair Hotel for the National Young Sommeliers Award Presentation.

The six sommelier contestants battled it out through a riveting competition and the winner, Thibaut Broussier from Dinner by Heston, who will now go on to represent La Chaine des Rotisseurs , Australia at the international event in Mexico.

We sampled some outstanding bites,

a few of which were, Kingfish tartare with chive, shallot and vanilla cream with petite herbs, Goats cheese profiteroles with onion jam; Duck terrine on walnut toast with quince paste and candied walnut and pickled cauliflower; Mini Wagyu burger with truffle mayonnaise.
