True North Summer Cruise
LA CHAINE DES ROTISSEURS – BAILLIAGE OF PERTH WESTERN AUSTRALIA
TRUE NORTH SUMMER CRUISE
Sunday 2nd February 2020
A superb Perth Sunday afternoon was on show for our annual cruise aboard the True North.
At the end of every season, True North comes home for a well-earned rest for both crew and ship. This beautifully appointed adventure cruise ship is world-famous for its luxurious and magnificent adventure cruises around the Australian, Indonesian, West Papuan and Papua New Guinea coastlines.
Fifty - one excited Chaine Members and guests were welcomed onboard by the exemplary crew, meanwhile, four chefs were working diligently in the galley preparing a much anticipated lunch.
In charge of the galley was Rhys Badcock, a Master Chef winner. Rhys was one of 18 chefs approached, in 2013, by the Masterchef production organisation. Rhys was the outright winner and went on to create a fantastic reputation.
He has a significant association with True North, and we were fortunate to have Rhys prepare and oversee the team for our lunch.
After an inspection of the award-wining vessel, guests assembled in the luxurious bar lounge and sipped on chilled Mann Brut Rose and partook of an offering of unusual canapes. The Pinctada oyster, generally known for producing pearls, also has delicate flesh, and was expertly served ceviche style.
Also, as a rare treat, the renowned Southern Bluefin Tuna was served sashimi-style with a light flavouring of soya sauce and lime. A delectable gift that melted in your mouth.
Alongside these delectable morsels were Gow Zee wrapped Shark Bay King Prawns served with a delicate accompaniment of Nouc Cham Sauce.
We set sail, north along the spectacular coastline, enjoying the beautiful sunshine and calm sea. It could not be a better day.
Craig Brent-White from Cape Naturaliste Wines, sponsor for this event, regaled the group with fascinating insights into the hazardous nature of growing grapes in the South West of Western Australia, including protecting the precious fruit from predators such as kangaroos and foxes!
The white wines served included a delicious, crisp Sauvignon Blanc and a very well received Semillon Sauvignon Blanc. The reds offered were
a Malbec, Reserve Cabernet 2016 and the renowned Cabernet Merlot.
We were truly spoilt by our sponsor as these wines are yet to be released.
We adjourned to the dining room downstairs, and Chef Rhys did not disappoint ! 6 oysters selected from Albany Western Australis, Tasmania, and the world renowned Coffin Bay from South Australia were delicious.
Next came the perfectly grilled West Australian Stirling Range Eye Fillet topped with a very generous half West Australian Rock Lobster! The accompanying pommes frittes and the superb Bernaise sauce were the perfect accents to these prized morsels.
Dessert of profiteroles with creme patisserie and the butterscotch sauce was a perfectly light, sweet finale.
Back upstairs to the bar lounge, guests wiled away the remainder of the cruise with a generous dose of camaraderie and a stunning array of cheeses accompanied by a superb Fine Old Muscat.
Many thanks again to the brilliant chefs, especially Masterchef Rhys and the fabulous crew of the True North!
Vive La Chaine !
